Soup, soup, soup

Like many times that I have already said before, I want to have a resolution where I cook something different every day or every week.

This weeks lunch has consisted of soup, four times in a row, encouraged by "Slimming World's little book of soups".


The first of the soups was my own invention, Sweet Potato and Carrot Soup

Ingredients

1 Onion                                             Cooking oil or spray
3 Carrots                                           Stock
1 potato                                             Sprinkle of cumin
1 sweet potato                                   Water

Method

1, Chop onion, parsnips, carrots, potato, sweet potato.
2. Heat in pan with cooking spray, stock, cumin and enough water to cover the vegetables.
3. When the vegetables are tender blitz the soup.
4. Taste the soup to taste for seasoning.
5. Heat until warm and then serve.

This book is fantastic, and works using Syns so perfect for the Slimming World diet or just used it if you want to eat a bit healthier.
